hey y’all. today my family and some family-like friends are getting together to eat food, louisiana styles! it’s a Louisiana Liberation Party!
i thought i would share with you the recipes I found on the INTERNET, which I will be making today and then making other people eat.
First UP: Country Club Salad — you might think you’re getting a salad when you read that name but you are in for a treat!
| APRIL’S LOUISIANA FRITO PIE
[emphasis on FRITOS mine]
1 large bag Fritos corn chips
1 large can Chile con Carne
2 cans stewed tomatoes
1 can black olives
1 can green chiles (optional)
2 cans whole kernel corn
1 block cheddar cheese, grated
Pour the bag of Fritos into a 9×11 baking dish and set aside.
Place the rest of the ingredients, (including the juice from the corn only), except cheese, in a pot.
Pour on top of Fritos.
Cover top of chile mixture with cheese and bake in a 350°F oven until cheese is melted.
Top with a dollop of sour cream on each serving and Enjoy!
This is similar to a tamale pie.
Goes great with Spanish Rice and a green salad, but can be served just as a meal alone.
Note: Get creative! Change this recipe and make it your own.Try adding green onions, sautéed onions, cooked ground beef, etc.
